  • Any way! Specifically it really depends on the potato and the dish. I'll take the Russet, very firm and filling. Either boil it and mash with seasonings like horseradish, garlic, black pepper, whatever you like and combine with a complementary protein. Potatoes are very high in minerals and potassium. You might also shallow fry coins and serve with a vegetable like broccoli, fresh corn or diced fresh tomatoes.. you could bake and eat straight that way, or cook, cool, cut into cubes and serve with vinaigrette, etc. etc. Potatoes are great because they are like an apple, assuming the flavor of whatever they are cooked with. They also almost always need salt, and a little butter or oil doesn't hurt either. I don't think I've ever wildly experimented with potatoes and been unable to eat the result.

  • Potato soup, for sure. I just made a whole bunch. Keep it simple, I say. Boil your potatoes adding a little salt and butter (after washing and peeling) until you can easily stick a fork in the potatoes. Take them out, keep the water. In a mixing bowl, combine the potatoes with 1/2 can of milk. Mix until you have approximately the consistency of mashed potatoes. Mix in the water (well), and continue to heat, adding butter, salt, and onion juice (or grated onion), until you are satisfied with the results. NOTE: once the milk has been added, DO NOT BOIL again.
