i mean like what knife would Steven Segal want to knife fight with?

Depends! If you like a light knife the CRKT CK Dragon is very good. But if you might be up against someone with thick or defensive attire we might consider a knife with a tanto blade; or, possibly, a heavy dagger: there's some good ones made by SOG. For Segal, yes, that dagger is ~10 in. blade with the requisite saw teeth on one side.
