Not a very 'edgy' answer, but definitely Monet. His work is just very calming to see. EDIT to add some non-Monet's to the mix. I really enjoy Degas' work as well. For impressionist work, his painting seem very life like.

I like Manet, Monet, Renoir, Degas, Cassatt all of them really. Impressionism is my favorite. I also like Mattisse although he may be more of a post impressionist. My mind isn't what it used to be.

Although he's actually a Post-Impressionist, I'm saying Gauguin. He went beyond contemporary European art by actually leaving Europe, which gives his work a beautiful alternative feel.

only one?? it is impossible! i love mary cassatt's portraits of mothers and children i love camille pisarro's peasant landscapes i love degas' horses i love manet's gardens and monet's lilies i love renoir's city scenes and let's not forget the american impressionist, garber and shoefield (sp?) it is impossible to choose just one

That is a pretty tough one, but I would go for Edouard Manet, because I like paintings with people in them more than I do landscapes. For landscapes, I would choose Monet as the most interesting Impressionist painter. And, one that is overlooked too often, is Gustave Caillebotte.
