Proteins begin to denature (unravel) at high temperatures. In infants the concern is primarily dehydration because they are highly susceptible to its effects.

Heat-labile proteins ? High fevers make some babies suffer grand-mal seizures, which has the potential for brain damage, though I don't know the molecular mechanism by which the seizure threshold is lowered.
