Artichokes, corn, brussel sprouts, potatoes, collard greens, zuchini, almost all depend on what you do with them.

Most people overcook them When you do that, they become an ugly greenish brown, get mushy in texture, and begin to release sulfur that makes them smell foul. I don't like them like that either.
