It's your body's reflex response to detecting a foreign substance in your upper airway. The point is to remove the substance from the upper airway by force. People say "bless you" out of deep-seated superstition, and for good cultural reason. In olden days, if someone sneezed a lot, it was a general sign of poor health, weather from an acute illness or chronic respiratory trouble, which usually led to death.
