A really easy meal I got at a Weight Watchers meeting. I got a bigger crock pot a while back, and now I try to cook in it 2-3 times a week or more. A couple of days ago, I made a really easy recipe by putting boneless, skinless chicken breasts in my crockpot. Then add 1 can of corn, 1 can of black beans, and a jar of chunky salsa. I let that cook on low all day while I'm at work. I make some quick brown rice when I get home, and serve the chicken/veggies on top of that. It's one of our favorite easy meals!

Last week. In the slow-cooler: Chicken Cacciatorre! With angel hair pasta cooked in the usual way - in lightly salted, boiling water. It was WONDERFUL - as usual! Thanks for asking your Q! A simple oven roasted chicken with French herbs, with small whole potatoes in the same tray and a greek salade as a side dish. Yum :)

In the crockpot, a whole chicken stuffed with lemon halves, garden sage and some figs and then I poured the last inch of 12-yr-old Scotch into the bottom of the pot and served it on a bed of angel hair pasta for my friends. Good way to use what was in the pantry, if I do say so myself!

About two weeks ago I cooked chicken breasts that were marinated in Lawry's Mesquite with Lime Juice.

Three days ago I had Chicken cooked in Lime and Coriander with mixed herbs. served with Vegetable rice. Very simple and quick to cook.

Chicken Stir-Fry with Noodles

It is really quite a plain meal but very tasty. First of all you simmer chicken pieces until nearly cooked. Then let it sit overnight in fridge and skim off fat next day. Next day you cut up potatoes, aubergine, cauliflour and broccoli. Cut them small and fry each vegetable in batches until they are crispy brown. Put chicken in new saucepan, add veges and season with salt, pepper and some dried chille (to taste). Next poor in hot chicken water to cover chicken and veges (I know this sounds weird). Then add rice. Put lid on and simmer until rice is cooked. There should be no water left on top. Then turn upside-down onto large serving dish. "Maglooba" means "upside-down" in Arabic. It is delicious!!
