I haven't had a baked potato since I was a kid. I don't know why. Awesome when it's absolutely smothered in butter. I remember being really small, it was Christmas eve and I was sitting in fron of the Christmas tree with my 2 brothers and sister. My mother made us some baked potatoes. Cut a little circle through the skin on the top and load it with butter! Scoop all the insides out and eat them. Then latch onto the buttery peel shell and polish that off. Funny that I still remember that so vividly. Then, a hot chocolate with a huge spoonful of marshmallow fluff on top. Mmmm. take your spoon and scoop off the now soft fluff, then... Get yourself another huge spoonful. :-) Make me a baked potato, please! Cool memories.

I also use cooking as a stress release. I love spending a saturday doing a quick bit of shopping and making a big meal for my wife and I. I love making risotto! It takes it's time, and it's one of those cooking processes that forces you to stop, slow down and take your time. Arburro rice, veg broth, coconut milk, mushrooms and a bit a nutmeg. Slowly (about two hours) to make.
