I believe the paper is backlit and has the paper shadow of the flower attached to the back of it. The light hitting the real vase is aimed lower as to fool the eye into thinking it is projected onto the paper. When he cuts the stem he is cutting through the paper and cutting the shadow stencil attached to back side and it falls off. Another way this trick could be done is the image IS projected onto the paper backdrop but from a different source from a different angle and is manipulated by a different person off stage..if that makes sense
