  • The energy of the microwave turns the water in the food to steam. This steam then escapes the food and trys to leave. The steam then condenses on the inside of the microwave and on the cooler surface of the food. When to oven turns off even more moisture condenses. This keeps the inside of the mircowave very moist and keeps the food moist. If you take the food out right away the moisture can evaporate off of the food but can lead to overly dry and crunchy things.
