There are two answers. Answer number one: The official answer - Hulk's skin was originally grey. The printer had trouble getting a consistent grey colour, and some of the prints came out green, which the colourist of the comic preferred and convinced Stan Lee to adopt as the official colour of Hulk. Answer number two: Answer number one is partially true, but the real reason Hulk is green is because he is heavily inspired by the 1940's comic "The Heap," who was green.
