  Yes it should be refrigerated and covered with plastic after opened. It should never be kept for more than a week.

The U.S. government regulations DO NOT ALLOW Kraft to label Velveeta "cheese" (because it ISN'T cheese). Kraft has cleverly and sneakily bypassed government regulations by labeling Velveeta as "cheese product" (rather than "cheese").

Velveeta? That shit barely qualifies to be called "cheese" it's basically solid lactose and additives. aka "American cheese"
