Like many items that are shelf-stable (OK to leave unrefrigerated BEFORE they are opened), the manufacturer strongly recommends that you refrigerate the product AFTER opening. *** Note that Velveeta is *not cheese*. The U.S. government regulations DO NOT ALLOW Kraft to label Velveeta "cheese" (because it ISN'T cheese). Kraft has cleverly and sneakily bypassed government regulations by labeling Velveeta as "cheese product" (rather than "cheese").
