It took me 25 yearxs to get this recipe from my mother-in-law: Boston Baked Beans 1 lb Dry white navy pea beans 1 ½ qts Cold water 1 tsp Salt 2 cup Brown sugar 1 med Sliced onion 1 tsp Dry mustard ¼ cup Molasses ¼ lb Salt pork Rinse and pick over beans Add beans to cold water; bring to boiling; simmer for 2 minutes; remove from heat and let stand for 1 hour [ALTERNATE: add beans to cold water and let stand overnight] Add 1 tsp. of salt and simmer beans for approx 1 hour, until tender. [CROCK POT METHOD] Drain beans reserving 1 ¾ cup of the liquid, Add sugar, onion, mustard and molasses. Take ½ of salt pork and chop, grind or slice thin. Leave other half as 1 piece Add all ingredients to crock pot, add additional water if necessary to cover beans cook slow for approx 18 hours (10:00 – 11:00 pm to 4:00 – 5:00 pm next day) Stir 2-3 times during cooking, adding additional water as necessary. I was on the Cape last week and introduced the natives to New Mexico Green Chile, so it's only right that I share my Boston Baked Beans with New Mexicans!

I do believe that Boston Baked Beans was one of the early satples of the settlers in the Boston area. The English who settled here brought the general idea from England and a restaurant in downtown Boston began making them. It is a baked beans recipe of navy or red beans using molasses. Ingredients are put into a pot and baked. The stuff you buy at the grocery store is a poor example but look up Boston Baked Beans using a crock Pot and you will come close to the original taste. It is really good and a high protein side dish. Paulete
