There was poison in the ice, the person who drank it slow had it melt, and the poison went into his drink.

If there are ice cubes in the drink (which is probably true), then here's what happened. The drinks contained poisoned ice cubes. Since the first guy drank it fast, the poison in the ice cubes didn't melt into his drink. The slow drinker's ice cubes melted, releasing the poison in the drink and thus killing him.

It could very easily be the ice cubes, yes, but a more colorful answer: The bartender had a grudge against the other man for sleeping with his wife of 5 years. So it was a sick form of revenge.....wait I'm rambling, it was probably just the ice....
