Most people don't recognize very simple things that make a huge difference -- a little lemon zest or a squeeze of lime juice in something that just cries out for acid.....a little sugar in something acidic, like tomatoes...finishing a sauteed meat or vegetable with a little fresh butter.

Anytime I can use fresh herbs or spices takes a dish to a whole new level, with a dash of sea salt of course.

I put mayonnaise in my pancake batter. It makes them really light and fluffy, but you cant taste it.

Well, not really secret, but I use ginger a lot. Mostly it isn't noticable for the people who aren't aware of it, but it gives a nice taste on most food, if you have the proper amount.

A can of beer when cooking a roast. It will help make it tender, and you can cut it with a fork. You will not taste any beer, when it is cooked.

Molasses, Caramelized onions and Garlic and Vanilla- All have been cooked into a paste and are added to many things as a flavor enhancer.

This may sound a little strange, but I sometimes make meatballs with grape jelly. The first time I tasted them from someone else, I was surprised to hear there was grape jelly in them. Another secret ingredient I have used is ketchup, brown sugar and coke a cola, mixed, and put on pork-chops in the oven. If done right, they are awesome. :)

ill tell you what it is and it has a bad name but the ingredient in question is derived from a seaweed calld seatangle and its msg (monosodium glutamate) it looks like salt and a half a teaspoon makes a whooole lot of difference

I squirt a little caramel sauce onto my chicken before i roast it. It's sooo good!

Ranch dressing in scrambled eggs. 7-UP or Sprite to marinade chicken breasts in. Substituting club soda for milk in pancake batter for lighter pancakes.
