Depends! In the "Spring" I will use a knife on "Old Spuds" so I can "Plant" them for crop. I will also use it if I'm making "Skins" to eat. Other than that I use a "Peeler" for "Mashed & Tater Salad Spuds". Everything else I leave "Skin On" as the "Nutrients" are in the Skin. John

I can't remember the last time I peeled a potato (it's been years; most of the recipes I use, I just leave the peel on)... But when I did I used a knife. I never threw away the skins, I always added them to baked potatoes later.

For potatoes, I use a green scrubber, then eat the skin left on.

I use a knife, but someone pointed out that using the brillo side of the sponge gets the dirt off, and the skin, quicker and without losing so much potato.
