How do these scammers manage to get your email from Amazon, Ebay ?

I'd suspect either eBay and Amazon sell it to them direct, or have a sweetheart deal to 'share' your data for 'free' with someone who does...most likely culprits being LilBro (Google), or Zucky Zoidberg and his Fakebook gang. Yep, I was right! https://www.businessinsider.com/facebook-had-a-secret-data-deal-with-amazon-2018-12 and https://community.ebay.com/t5/Archive-Selling/How-much-personal-data-is-eBay-selling/td-p/18308113. Another possible source to leak your email is Paypal, in your PayPal payment transaction.
