Assuming you have waited for the grill to be hot enough, first clean the grill with a wire brush then spray it with Pam or a spray release agent. That will cause a flair up so keep your face out of harms way. Then be sure the food going on the grill is also well oiled.

Everybody else is right, use cooking spray just before putting food on the grill. It's also especially important for food that easily sticks to clean the grill first (after the grill is hot) with a wire brush grill cleaner.
