Unless I'm mistaken, non-organic eggs come out in the same variety of colours as any others, but get bleached later on in the process so that they turn out uniformly white.

I keep reading that it is the breed of chicken, white chickens white eggs, brown chicken brown eggs. When I was growing up my grandparents raised chickens. They were white chickens, that laid brown eggs. They told me it was because they fed them ground oyster shells, which also made the shell thicker.

A few things about egg color: -It 100% depends on the breed of the chicken. Chickens with white earlobes (like White Leghorns) produce white eggs. Chickens with dark earlobes (like Rhode Island Reds) produce brown eggs. Rhode Island Reds are bigger and require more feed, which is why brown eggs are more expensive. Chicken eggs can also be blue, green, or speckled. -There is no nutritional difference between brown and white eggs. -I have no idea why organic eggs are always brown. It doesn't seem like there's any real reason for it (other than perhaps the perception of brown as healthier) but in my experience organic eggs are always brown. Other things: Eggs definitely don't get bleached. Eggshells are permeable, so that definitely wouldn't work. Also, eggs come from the chicken with a natural coating of good bacteria which prevents bad bacteria from getting in. Egg producers wash it off and coat the eggs with a thin layer of oil to replace that protection. This is why you shouldn't wash your eggs.
