If a professor signs an email with his first name that means I can adress hi by only his first name
If I wrote an Email to a professor addressed as dear prof. doe and then signed off as sincerely jane doe. He wrote back signed of best wishes john. Fom the on I can just write Hi John, right?

In etiquette, it's generally preferred to address a person too formally if you are unsure, to allow the person being addressed to correct you if that person is uncomfortable with the formality. But I suppose no one really minds etiquette these days, and/or the rules are all unwritten and arbitrarily universally misunderstood, so I don't really know at this time.
