Don't overcook it. Cook it around 300-350 degrees F, and if it has one of those little pop ups, watch for it and pull the turkey as soon as it pops. Otherwise, use a meat thermometer ad pull it when the breast reaches 165 F and cover it and let it rest about 20-30 minutes before carving.
