Leia was a princess by birth. Her birth mother, Padme, was Queen of the Naboo.

According of the novelization of the episode III, Senator Bail Organa was the Prince Consort of the Queen of Alderaan. Leah, being adopted by this couple would became a princess. Also, I don't know that being the daughter of Padme would make her a princess. Padme was not Queen of Naboo at the time of Leah's birth. Also, Queen of Naboo appears to be an elected position rather than a hereditary one.
