Right now I have white, white wine, red wine and cider. Occasionally I have balsamic malt and sherry.Oh yes, rice wine vinegar. They all have their uses, many can be interchanged.

White, balsamic and red wine are all good for cooking and salads, and apple cider vinegar has lots of health benefits, but I think it tastes awful.

For salad dressings and hot-and-sour soups, we go with Japanese Marukan Seasoned Gourmet Rice Vinegar. I like malt vinegar for french fried or fish and chips. Plain old white or cider vinegar is fine for all around use.

Apple cider vinegar - I use it on my salad (w/ olive oil) and I take it diluted in water as a health aid (for weight control, plus it alkalines the system, which is necessary for optimal health).
