Look for marbling. Thats a small amount of fat throughout the piece. This assures tenderness.

Yes, I do know how to pick out a good cut of meat. In fact I can cut you one hell of a piece of meat. I cut rib eyes, sirloin and made fresh ground round just this morning at work.
