There are accounts of "maccaroni" in Italian documents as early as the 1100 a.d., well before Marco Polo came back from China (or was even born). Romans ate pasta as lagana, a kind of lasagna. Arabs might have expanded the pasta shapes... But that is still debated.

In the northern Italian regions where my grandfather is from they ate much more rice than pasta. I guess it was the same before the pasta came, rice, lots of rice. Risotto was one of his favorites.
