I love using the zest in things as the juice loses it's taste and intensity once you cook it. It's great added to rice or over a roast chicken, stuff the lemon halves in the cavity. Grate the zest and rub on a lamb roast. Add it to sugar cookies. Make an icing with th ejuice and the zest and pour it over a simple, plain cake with holes poked in it. The lemony icing will permeate the whole thing. Or make lemon cupcakes and ice them with lemon. Lemon curd is terrific, too, easy to make at home. I couldn't cook without garlic and lemons. I always have a big bowl of them on the island.
