It depends; If I'm cooking I know in advance whether or not it needs seasoning, so I would season and then eat. If my mother were cooking, I know it would always need seasoning. In restaurants I taste first if I don't know their standards.

I stopped adding salt to food years ago, but I usually throw a little pepper on certain foods before I taste it. Sometimes it's a good thing, sometimes it's a bad call. :)
