That's my favorite cake. However, "red velvet cake" isn't its real name. The real name for this cake is Waldorph Astoria, so named after the Waldorph Astoria in New York where they were originally made.

Why use red coloring when there are abundance of natural ingredients you could use that can give natural red color to your cake? Very fine example is using strawberry purees, red pitaya fruit (in some Asian countries, they are also known as "Dragon Fruit") or even red water melon. Yes, it's delicious and I love it. I have 3 boxes of Red Velvet cake mix in my pantry right now along with a can of cream cheese frosting. I always substitute a cup of mayonnaise for the cooking oil as it makes a more moist cake.
