They should know how to tell a good piece from a bad piece, by looking and touching the meat. Being a Professional Meat Wrapper for 3 years I found that hands on is the best way of ensuring the meat is really the best quality. From my personal experience I find that the meat with the bone in is the best! Hope this helps you out Spicy!!! +5

good with a knife, good with math for measuring weight and wrapping paper size , good knot tieing must be very clean. this still does not make him a good butcher

A professional meat wrapper? Hahaha! Where did you come up with the idea for this question? That is so funny! I suppose they would need to be great with their hands, willing to handle whatever meat showed up and be willing to adapt accordingly.

Hehehe, I used to be one. Family biz. Okay: You need to know how to use a scale in order to weigh the meat, you have to know how to seal packages and boxes, you need to know how to use a cryovac machine, you need to know how to use a tape roller, you need to know how to cut meat to get the right size, you need to know how to wrap meat, you need to know how to mark and put up orders, you need to know about labels and marking packages and boxes, and many other small things depending on who you work for, and how they want things to be done.
