McRibs is one of the QSR menu items who's sole purpose is to be a promotional short-term product. In terms of profitability for the restaurant, it's not a high-profit item that sells enough across the entire McD's demographic to make it a valid permanent menu item. It's recipe and prep requirements don't make it attractive behind the counter where each second and body movement counts in delivering the product. But it is popular enough for short-term promotional benefit, where it can drive in traffic they hope to build a sale on (suggestive selling), and bring in customers who may not otherwise come into McD's that often. The ingredients aren't a problem, though it's a higher cost item than just a regular menu item.
