Why is it that the McRib is only around for short periods of time and not on the menu all year?

According to my information source, McRib is only manufactured for a certain time of the year. this is due to the availability of the ingredients in each McRib and the labor involved. Buy it while you can. When its gone.....it gone.

McRibs are a Promotional item

McRibs is one of the QSR menu items who's sole purpose is to be a promotional short-term product. In terms of profitability for the restaurant, it's not a high-profit item that sells enough across the entire McD's demographic to make it a valid permanent menu item. It's recipe and prep requirements don't make it attractive behind the counter where each second and body movement counts in delivering the product. But it is popular enough for short-term promotional benefit, where it can drive in traffic they hope to build a sale on (suggestive selling), and bring in customers who may not otherwise come into McD's that often. The ingredients aren't a problem, though it's a higher cost item than just a regular menu item.

It takes a long time for all that pig tripe to congeal, then its a slow process scraping it from the mold and making a sauce that covers the taste. Every batch has to pass the FDA "Is this REALLY Food" test, which it does because Americans will shove almost anything in their mouths.
