  • Koshary comes to mind. A great dish that can be made in a variety of ways. KOSHARY (RICE, MACARONI AND LENTILS WITH TOMATOES) Koshary is a vegetarian dish. Rice, noodles and lentils provide sufficient protein. Salad and pickles are usually served on the side. Some people like to serve it with garlic sauce (but the real Egyptians don't). See: https://bestemmingegypte.nl/eten-drinken/eten/ Ingrediënts required for 2-3 person serving: Base: 250g of brown lentils 100 g of macaroni 100 g long grain rice salt freshly ground black pepper Sauce: 2 onions, finely chopped 2 cloves of garlic, pressed 2 tablespoons oil 400 g canned tomatoes, cut into pieces 1 tablespoon wine vinegar 1 fresh red chilli, chopped, or dried chilli, crumbled 1 tablespoon fresh parsley, finely chopped salt freshly ground black pepper Put the lentils in a pan and pour in enough boiling water. Bring the water back to the boil, put the lid on the pan and let the lentils boil for 30 to 50 minutes, depending on their size and age. Drain them. In the meantime, make the sauce. fry the onions with the garlic in the oil for 5 to 10 minutes or until soft. Add tomatoes, vinegar and chili pepper, and simmer for 10 minutes until the sauce thickens. Sprinkle with parsley and add salt and pepper to taste. While the sauce is thickening, cook rice and macaroni together in a pan for 12 minutes. Drain them. Mix the lentils, macaroni and rice, add salt and pepper and put them in a well-heated serving dish. Pour the tomato sauce over the lentil mixture. serve warm.
