  • Biologically, it's mostly fat (60%) and water. The nerve cells that actually do the work are largely protein but the are a relatively small part of the mass of the brain.
  • Mostly cholesterol, I believe. That is why you shouldn't feed a lowfat diet to an under three year old and probably not even to the under five crowd. Those are the years when the brain is doing most of its growing. That doesn't mean that making them obese makes them smarter, but if you cut it too sharply, you can cause brain damage. That is why the government stopped requiring fat content on labels of baby food years ago.
