Without getting too graphic, my thought is that it has something to do with the Hans Brinker story. :o) Or, I guess that would be "Helga Brinker."

It originated in Holland of course. dyke 1931, Amer.Eng., probably shortening of morphadike, dialectal garbling of hermaphrodite, but bulldyker "engage in lesbian activities" is attested from 1921, and a source from 1896 lists dyke as slang for "the vulva." http://www.etymonline.com/index.php?search=dyke&searchmode=none
