  • My understanding is that evaporated milk is condensed milk. There are govt standards for the condensation, etc. The evaporation process removes water; in SWEETENED condensed milk, sugar is added to the evaporated milk making it a sweet product, not a regular evaporated milk. You probably wouldn't want to substitute sweetend condensed for evaporated in say, macaroni and cheese!   • Condensed milk usually has sugar added to it, whereas evaporated milk has gone through a water removal process only.
