My understanding is that evaporated milk is condensed milk. There are govt standards for the condensation, etc. The evaporation process removes water; in SWEETENED condensed milk, sugar is added to the evaporated milk making it a sweet product, not a regular evaporated milk. You probably wouldn't want to substitute sweetend condensed for evaporated in say, macaroni and cheese! Condensed milk usually has sugar added to it, whereas evaporated milk has gone through a water removal process only.
