Why, Whenever We See Documentaries about the Mafia, its always about their money and power, never about their cruelty and sadism?
For example, Bugsy Siegel is always portrayed as the guy who built Vegas but how many women did he rape, or blackmail, or ruin? How many people did he blind or chop off their ears, or put in the hospital or the funeral home. How come all this cruelty and sadism is covered up?

I think you might be confusing documentaries with Hollywood films. **At least in my experience**, documentaries almost always mention the illegal activities and more remarkable murders engaged in by particular mafia bosses and henchmen, in addition to emphasizing power struggles. BEING documentaries, they typically cater to the television audience and (therefore) tend to be a little on the family-friendly and we-can't-gross-people-out-too-much side of things. Hollywood films typically imagine one or two horrific scenes, also emphasize power struggles, and in addition emphasize the (probably usually imaginary) friendships, family and romance.
