      Pamela: correct me if I'm wrong, but the ONLY difference between skim milk and whole milk is that whole milk has butterfat added while skim milk does not. If I'm not mistaken, the butterfat is ALWAYS separated from the milk before bottling, and this so that the milkfat content of whole milk can be fixed at an exact percentage. (Note: in my youth, whole milk had 4% fat, now in the U.S. it's set to 3.25%.) In any case: raw cow milk fat content is variable, but in modern dairy cows typically exceeds 4%. SO: whole milk (at least in the U.S.) is not any more "natural" than skim milk. *** For REAL "natural" milk you'd have to go back to the 50s, when milk was not homogenized and the cream floated to the top of the bottles. Of course, milk at that time was still typically filtered and pasteurized. (Raw milk - even filtered raw milk - tends to be quite dangerous for human consumption, statistically speaking.)
  • Skim, of course. The primary difference is the fat content...but reduce the fat content, and what you get is more of the non-fat content, including the protein. Go ahead, compare nutrition labels of skim and whole milk. Skim typically shows 5% higher protein content per serving and no fat per serving.

  • Whole milk is better because of the fat content. People who avoid fat end up eating more carbs - fat and carbs are the body's energy sources. The body will use fat before it uses carbs. Excess carbs are stored and this is where the weight gain starts. And the diabetes, kidney failure, high blood pressure, and other health issues.
