If I am in a social situation, I say "pardon, I missed that". In a work place I say "say again please".

To me, "pardon?" sounds like it would a more polite way to ask for a repeat. There's nothing wrong with "what?," though, provided you're asking in a polite manner. You could just say that you didn't hear what the person was saying clearly. "I'm sorry, but I didn't quite hear what you were saying." Just as long as you're not saying "huh?," then you're fine.

yeah, "pardon me?" is definitely considered more polite than "what?" if you're ever in a job interview, or something else where it's important to put your best foot forward, you would definitely want to use "pardon me"...

Out of those two I would say pardon but I normally say "excuse me can you repeat that I didn't quite catch it'

To answer your question pardon is more polite, what sounds kind of rude unless you are talking to a close friend or family and you have a nice tone with it. I however never use the word pardon, I always just say I'm sorry I didn't hear you can you repeat that?

I would say "Pardon" given the choice of the two. It seems more polite. Were I am currently living, "Excuse me" seems to be more popular. "Please" is more popular in the Cincinnati area.

Pardon. Although, if I needed someone to repeat themselves, I usually say "sorry?!". That's sorry with a certain tone so they know I don't mean an apology. Or, I say "excuse me?!"
