I've heard two explanations. One is that it comes from Britain and is an acronym for Constable on Patrol. the other is that it is short for copper, in reference to the copper buttons that were once common on police uniforms.

1-26-2017 Nothing to do with buttons or abbreviations. "To cop" is a verb meaning to grab. Copper = grabber.

Because when you call them Pig, Ass Wipe, or Dick Head they tend to get a little more inclined to use the taser and zap you. : )
