My Mom's homemade sticky buns...right out of the oven [she always said they weren't good for me then...but she would let me have one, anyway:-)]. Everybody in the family loved them...and she was so proud of herself. They were SO good! Anyway, I'll bet she's making a big batch right now...up in Heaven. Recently there has been all this talk about cinnamon being helpful to diabetics in that it helps control blood glucose. Well, here is a surprise. In USA, most of what we buy in stores as cinnamon is NOT really cinnamon. It is a 'spice' called Cassia. Like true cinnamon, it too is a bark - but 'true' cinnamon is from places like Sri Lanka, and Indonesia. That being said, in markets, there is little to no distinction made in the differences between cassia and cinnamon. Why? When Columbus 'discovered' the new world, he could not deliver to spain the promised short cut to the Indies (or spice islands). In his quest for additional funding for more trips to new world, columbus sold the spanish monarchy a bill of goods about spices - and thus the cassia cinnamon hoax got its roots. If you have chance, visit a spice specialty shop (online or physical) and get yourself some true cinnamon. The difference is great - and sublime. Penzey's spices sells true cinnamon. and other delights.... Which brings me to my Q about cinnamon: is cassia cinnamon credited with lower blood sugar, or is true cinnamon? Or does it not matter?
