INGREDIENTS 10 slices white bread, cut into cubes 1/4 cup butter, melted 1 teaspoon ground cinnamon 1/2 cup raisins 1/4 cup walnuts 6 eggs, beaten 3/4 cup white sugar 2 teaspoons vanilla extract 1/2 teaspoon salt 3 cups scalded milk 1 pinch ground nutmeg DIRECTIONS Preheat oven to 375 degrees F (190 degrees C). Lightly butter one 2 quart baking dish. Combine bread cubes, butter, cinnamon and raisins; mix well and place in baking dish. Beat together the eggs, sugar, vanilla and salt. Add milk, mix well and pour over bread cubes. Sprinkle with nutmeg and bake for 25 minutes.

Stir sugar and 1/4 cup water in heavy small saucepan over medium heat until sugar dissolves. Increase heat to high and boil without stirring until mixture turns deep amber color, occasionally swirling pan and brushing down sides with wet pastry brush, about 7 minutes. Stir in nuts. Quickly spread nuts on prepared sheet. Cool. Chop praline into small pieces. (Can be made 1 day ahead. Store in airtight container at room temperature.) For bread pudding: Whisk eggs, cream, sugar, 1 cup maple syrup, raisins and vanilla in large bowl to blend. Add brioche; stir to coat. Let stand at room temperature 1 hour, stirring occasionally. Preheat oven to 375°F. Butter 13x9x2-inch baking dish. Transfer bread mixture to prepared dish. Bake until puffed and golden and toothpick inserted into center comes out clean, about 40 minutes. Cool slightly. Cut into 6 to 8 pieces. Place 1 piece pudding on each plate. Place scoop of ice cream atop pudding, drizzle with maple syrup, sprinkle with praline, and serve.
  • 1/4 c. brown sugar 1/4 tsp. cinnamon 3 c. cubed bread 5 eggs 1/2 c. brown sugar 1/2 c. raisins 1/2 c. chopped nuts 2 c. milk 1/4 c. butter 1 box instant vanilla pudding In 2 quart bowl toss bread, 1/4 cup brown sugar, cinnamon and raisins and nuts; set aside. In a 2 quart bowl mix together 5 eggs slightly beaten, 1/2 cup brown sugar, 2 cups milk, 1/4 cup butter. Microwave on high power for 2 minutes. Add to bread mixture, tossing lightly. Cover with waxed paper, microwave for 8 minutes on high, then lightly toss and microwave for 12 minutes on half power. Let stand for 10 minutes and then pour vanilla pudding over top.
