Only a very few stay in business. Chinese restaurants have a bad reputation for cleanliness. Undercover cameras have revealed workers peeing in closets and not washing their hands. Rats and roaches abundant in the kitchen. And, food kept at dangerously low or high temperatures. It appears that staying in business is a health issue for Chinese restaurants. This gives a new meaning to "Hung Chow".
