What constitutes overtime? Working longer than 8h/day 40h/week or getting paid more than your base rate?

where i work, full time is usually 40 hours a week on a biweekly pay rate. That being said to get the "depends on hours" question out of the way, At the restaurant i work at between 15 to 20 overtime hours from the end of October till about April. I love being a cook.
