  • It depends. Food is a big risk. The profit margin is small, and the raw materials have a high attrition rate from spoilage, improper prep, etc. Alcohol can be marked up 500%, rarely spoils, doesn't get burned by inexperienced line cooks, is more difficult for employees to steal and get away with, etc. But still, it depends. Restaurants that are busier for dinner than for lunch will have a higher rate of alcohol sales. Restaurants that have "fancier" atmosphere and higher prices tend to do more in alcohol sales. So, for MacDonalds, food sells better. For a Michelin star French Restaurant in Manhattan, I'd be surprised if alcohol doesn't generate more profit.
