Glass is best, plastic is second and wood is bad. Wood holds particles of food which spoil. You can never really clean the wood.

I would prefer the wood because I don't want my steaks to taste like plastic.

I like wood, it's got a nicer feel, ages better, and is kinder to knives. But you do have to be careful about cleaning them well.

Wood. Plastic is ok. I would never use glass. The danger of cross contamination is the same on a wood board as plastic or anything else. Keep it clean and you have no problem. After your done washing your board you should rub a lemon on it. the citric acid kill any leftover germs, then just wipe it down again.

it depends weather the plastic has the antibac impegnation then plastic i guess, you can also put plastic in the dishwasher

i prefer the feel of wood, but plastic is easier to clean. you can bleach soak a plastic board and not have to worry. bleach will damage a nice wooden board so you can't get it quite as sanitized.

I like plastic, it's much better for drag slicing, and also, wood has this nasty habit of incubating germs.
