i chop green peppers, onions, jalapeno peppers, and add some red pepper flakes for the meat. for the tacos, is shredded lettuce, chopped tomatoes for those who like them, sharp cheddar cheese fancy shred, home made sauce, and sour cream. i serve with flour or corn tortillas and of course have hard shells on hand for those who prefer a crunch. +5

Cayenne! Hot sauce makes the meat taste too vinegary. Crushed Cayenne Powder won't change the original flavor but makes it spicy. I add it to everything since I love spicy food but hate the taste of most hot sauces.

I add a little cumin, chopped sour pickles, and onions to the meat while it's cooking. Then I add the usual ingredients after the meat and tortillas are done---lettuce, tomatoes, cheese, and sauce. That is the way my mom fixes hers, so I do the same.

I add sour cream, cheese, lettuce, tomato, guacamole, and hot taco sauce. Along with some Coronas or Margharitas and you'll have a very nice dinner! Enjoy..

I made Baja fish tacos last week. http://www.epicurious.com/recipes/food/views/Baja-Fish-Tacos-352509 One minor change - instead of grilling the fish, I lightly dust the fish in cornmeal, eggs and black pepper and pan fry in olive oil. Also, if you don't have Mahi-Mahi, you can use any white fish. Halibut and Tilapia work really well.

Just about anything goes. Olives - I love olives. Bell peppers, beans, meat, cheese, lettuce, salsa/taco sauce, herbs, spices, go nuts, have fun.

We always have chili beans, garlic, onion and mince ofcourse in it and a little red pepper. Sour cream and fresh guacamole, tomatoes, lettuce and cheese. We make fajita's often too. I am more into chicken than mince and it is less heavy.

WE do corn shells dipped in hot oil so they stay soft, and meat only seasoned with salt and pepper, and cheddar cheese, velveeta cheese, and lettuce and tomato and avocado and sour cream and green onion.
