In my opinion, beef. The best stewing beef comes from the chuck.

beef, most store have it prepacked at sell it as stew meat or you can purchase a good lean chuck cut of beef and slice it into cubes for the stew.

Braising steak is my choice of beef for a 2 hour casserole but stewing steak needs about 4 hours then its tender and yum!

Beef stew made with beer is great. Or beef with horseradish added and the usual vegetables. Lamb makes good stew too.

I like to use pork. Nothing gives better flavor to me than pork & a bit of pork fat. Just about any cut of pork works in a stew. Yummy!!!

My grandmother makes the MOST AMAZING oxtail stew. Such good sauce, tender oxtail falling off the bone...alas, I don't eat pork or beef anymore. But man, it was AMAZING.

Rabbit is the best I've ever had. For store bought varieties of meat, I like beef the best.

I don't think there is a best meat. Beef is excellent but so is lamb and pork with the right other ingredients. Maybe my favorite is venison or elk. But then again rabbit is really good, too.

I use beef stew meat. Already cut up and packaged at the grocery store! I also use round stk and cut it up myself! Thanks keithhold! +5
