Peal them put butter and some garlic and some herbs on them and give them 30 mins in the oven for roasties. Lovely.

Potato Patties Baby!!! Modified of course to your left over taters : ) 3 lg. potatoes, cooked, peeled, and mashed 2 1/2 c. sugar 1 1/2 tsp. salt 3 eggs 2 tbsp. shortening 1 c. sweet milk 5 tsp. baking powder 1 qt. flour Nutmeg to taste Cream sugar, salt, and shortening. Add eggs, stir in mashed potatoes (warm). Add flour and baking powder alternately with sweet milk. Add nutmeg and mix well. Roll batter on floured surface. Cut with doughnut cutter and drop into hot cooking oil in deep fryer. Remove from liquid when both sides are browned. Makes about 6 dozen.

If you like cheese and ground meat, you can make a cheesy and meat potato pie.

Make hash browns....just grade them and put butter in a cast iron skillet (they are best ) let it melt then scatter the graded potatoes on the skillet salt and pepper them as they cook....you can add other things to them to give them more flavor. Enjoy!!!!!

Make croquettes after mashing them with some chives and butter. Roll them in flour, egg, and then breadcrumbs. You could make little patties and freeze them between sheets of wax paper or foil and then when you want a little potato patty, take it out of the freezer for a couple of hours and fry it up in a pan. Great for breakfast with eggs. Make a shepherds pie the next day and top it with mashed potatoes. Or fry up some shredded red cabbage with onions. Place in a shallow casserole dish, top with mashed potatoes, and grated cheddar cheese or feta on top.

there are these things called potato shooters...pretty nifty thing.

Put the potatoes into a bowl. Mash with ingredients like milk, parsley, salt, and pepper. Roll the potato into a ball. Stuff with your favorite cheese and bake. I'm sure you could find a recipe!
