Is there a simple science project that demonstrates centrifugal force for junior high students that uses a fishing line and a sinker to show the movement?

I think so, yes. Hold the fising line and spin it around. After a while, release it, and watch it fly off tangentially to the direction it was going. My teacher, a few years ago, demonstrated it with a bucket with some water inside (much to the amusement of the students, but he was a good teacher like that).
