Wow! That's some reputation you've to live up to now. Anyway, I would ask her why exactly she says that, and what it is about you that she find interesting. To me, being interesting goes hand-in-hand with being interested - you can never ask too many questions, and the search for new knowledge (whether it's useful or not) is one of my priorities. There's a quote, by somebody whose name I forget now, that only boring people find things boring. So, encourage her to ask questions, and never take anything for granted, and then she too will be interesting too.

She will change, but don't worry, she will not loose her love and attention to you... there is fases in live and everyone goes over it... Any ways, that is very swit and you should enjoy every second of it. That is really good to hear.
